Turtle Brownie Ice-Cream Dessert Recipe

This turtle brownie ice-cream dessert can be consumed each season. It’s an ideal treat for holidays and weekend parties. Creamy and easy to make – just perfect! Here is the recipe:

Turtle Brownie Ice Cream Dessert

Servings 20 


For the brownies:

  • 1 box (1 lb 2.3 oz) fudge brownie mix
  • Water, vegetable oil, and eggs called for on brownie mix box
  • ½ cup chopped pecans

For the filling:

  • 2 quarts (8 cups) dulce de leche ice cream, slightly softened
  • ½ cup hot fudge topping, heated until warm
  • ½ cup chopped pecans
  • 1 cup frozen whipped topping, thawed



  • Heat oven to 350°F/ 180°C/ Gas Mark 4. Spray bottom of the 15x10x1-inch pan with cooking spray. In a large bowl, stir brownie mix, water, oil, and eggs until well blended. Stir in 1/2 cup pecans; spread in pan.
  • Bake 15-17 minutes or until center is set. Be careful – DO NOT OVERBAKE. Cool completely on wire rack, about 45 minutes.
  • Spoon ice cream evenly over brownies; smooth with the back of spoon or rubber spatula. Freeze uncovered until firm, about 3 hours.

To serve:

  • Drizzle hot fudge topping over dessert with a fork using quick strokes.
  • Sprinkle with 1/2 cup pecans.
  • Let stand at room temperature about 5 minutes before cutting.
  • Serve topped with whipped topping.



Extra Tip: Vanilla ice cream can be used in place of the dulce de leche ice cream. Drizzle the bars with 1/2 cup caramel topping as well as with the hot fudge.
