Easy Banana Caramel Cream Dessert Recipe

Servings 6 to 10 (depending on your serving cups)

Ingredients:

  • 2 bananas (for 6 small dessert servings)
  • Vanilla Pastry Cream (see the recipe below)
  • caramel sauce
  • whipped cream (I used 1 tablespoon powdered sugar and 3/4 cup heavy cream)
  • Graham Cracker crumble (see the recipe below)

To make the vanilla pastry cream:

  • 1/4 cup cornstarch
  • 1/2 cup sugar (you can increase it to 2/3 cup if you prefer sweeter desserts)
  • A pinch of salt
  • 2 eggs
  • 3 cups milk
  • 2 tablespoons butter
  • 1 tablespoon vanilla extract (or 1 teaspoon vanilla bean paste and 2 teaspoons vanilla extract)

To make the graham cracker crumble:

  • 1/3 cup butter, melted
  • 1 1/2 cups graham cracker crumbs (around 10 crackers)
  • 1 tablespoon sugar

Instructions:

To make pastry cream:

  • In a medium bowl,  whip eggs with a fork to combine.  Leave aside.
  • Combine cornstarch, sugar, and salt in a medium pan. Slowly pour in milk, while beating, in order to make a smooth mixture. Heat it over medium, stirring constantly, until the mix thickens and boils.
  • Add several tablespoons of the hot mix into the bowl with the eggs and stir well. Place warmed egg mix into the pan with the remaining hot milk mix.  Return to a slow boil, and by stirring constantly cook one minute.
  • Remove and stir in vanilla and butter. Leave aside to cool.  Once the pan has cooled, cover with plastic wrap and put in the fridge to cool completely.

To make the graham cracker crumble:

  • Crush the graham crackers in a ziplock type bag.  Add crumbs, melted butter, and sugar into a bowl and, stir until well combined.
  • Apply into a 9 inch by 13-inch casserole pan and press evenly.  Bake at 350°F/180°C/ Gas Mark 4, for around 10 minutes, or until light brown.  Set aside to cool.

To assemble:

  • Spoon around 2 tablespoons cracker crumble into separate serving dishes. Press the crumble evenly to create a firm layer.
  • Apply a layer of pastry cream into each serving cup.  For easy assembly, fill a ziplock type bag with the cream, and fill the dishes. Then, add a few slices of banana and top with a layer of whipped cream.
  • Sprinkle some cracker crumble and a drizzle of caramel (if desired).
  • Serve or place in the fridge. Just before serving, top with a slice of fresh banana.

Enjoy!
